Red Kitten Spinach – An Experiment that worked

I know that I’ve spent a fair amount of time writing about Mache and
it’s virtues. First and foremost is it’s ability to grow under plastic,
overwinter and mature in late Winter for harvest. I’m here to say that
Mache isn’t the only vegetable that you can grow in that manner. Last
fall, I tried some “Red Kitten” spinach as well. To my great surprise,
it did very well and we have been enjoying it in salads since the end of March.

We love the taste and texture of this variety and heartily recommend it to you.
